Recipe Notes: The truth is, I have tried many different beignet recipes and while they all turned out quite pretty, none of them tasted good enough for me to recommend to you. If there is a recipe for the home cook that produces beignets anywhere close to as good as those served at Cafe Du Monde in New Orleans, I sure haven't found it.
Because of that, I look at beignets as a special treat that's only available on very special occasions – if I find myself in Louisiana or if I happen to come across a great bakery elsewhere that knows how to make them. It's like with great summer peaches, you can only get them close to the orchards and only during the short period of time when they're perfectly ripe. But that's what makes them special. :)
