No-Bake Cherry S’mores Summer Mini Pies

Recipe Notes: This recipe is a perfect little summer dessert treat. It's based on the traditional s'mores flavors, with a no-bake graham cracker crust, melted chocolate and a marshmallow–like, gooey meringue. The cherries add a new twist and provide the perfect contrast for the sweet filling.

I personally like to add instant espresso powder to the meringue for extra flavor but you can definitely leave it out if you don't care for it or want to serve this dessert to children. 

 

No-Bake Cherry S’mores Summer Mini Pies Recipe

This recipe is for six 4-ounce ramekins

Ingredients:

For the crust:

  • 1 cup crushed graham crackers
  • 4 teaspoons light brown sugar
  • pinch of salt
  • 3 tablespoons unsalted butter, melted

For the meringue filling:

  • 4 egg whites
  • 1 cup sugar
  • 1 teaspoon instant espresso powder (optional)

For the chocolate topping:

  • 1.5 ounces high–quality bittersweet chocolate, finely chopped*
  • 0.5 ounce high–quality milk chocolate, finely chopped*
  • 1 tablespoon unsalted butter
  • 12 ripe fresh cherries

*Don't use chocolate morsels; morsels have stabilizers in them that actually prevent them from melting.

 

Directions:

For the crust:

  • Mix crushed graham crackers, sugar and salt together in a bowl.
  • Pour in the melted butter and stir with a fork until the mix is evenly moist.
  • Using your thumb, press the crust into the ramekins.
  • Transfer the ramekins to the fridge and chill for at least one hour.

For the meringue filling:

  • Place egg whites and sugar into a bowl and set over a pot of simmering water.
  • Whisk the mixture until the sugar is dissolved, about 3 minutes. (Rub the mix between your fingers to see if the sugar is dissolved; you’re done when you can’t feel any granules any longer).
  • Take the mix off the heat and, if using, whisk in the espresso powder.
  • Beat with an electric mixer to firm peaks. (It will be a gooey mass).
  • Pipe the meringue into the shells, then lightly toast it with a torch or under the broiler.

For the chocolate topping:

  • Add both chocolates and the butter to a heatproof bowl and set over a pot of simmering water.
  • Let the chocolate and the butter melt, then whisk them together.
  • Drizzle the chocolate over the meringue, then top each mini pie with two cherries.
  • Chill until the chocolate has firmed up.
