Recipe Notes: I baked freshly grated orange zest into these Linzer cookies and then filled them with a bittersweet chocolate ganache flavored with more orange zest and a tablespoon of Grand Marnier. Great holiday/winter flavors!

 

Orange Linzer Cookies with Grand Marnier Chocolate Ganache Recipe

makes ~ 16 sandwich cookies

Ingredients:

For the cookies:

  • 1.5 cups all-purpose flour
  • pinch of salt
  • 11 tablespoons unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon finely grated orange zest 
  • 1/2 teaspoon vanilla extract
  • powdered sugar

 

For the ganache:

  • 2 tablespoons heavy cream
  • 1 tablespoon unsalted butter
  • pinch of salt
  • 1 tablespoon Grand Marnier
  • 1/2 teaspoon finely grated orange zest
  • 2 ounces high-quality bittersweet chocolate, finely chopped (I recommend Ghirardelli 60 percent cacao bittersweet chocolate baking bars)* 

*Don't use chocolate morsels; morsels have stabilizers in them that actually prevent them from melting.

 

Directions:

For the cookies:

  • Whisk flour and salt together in a bowl. Set aside.
  • Beat butter and sugar until well combined and creamy.
  • Beat in the zest and the vanilla extract.
  • Beat in the dry ingredients.
  • Bring the dough together into a ball by hand, wrap in plastic wrap and chill in the fridge for 30 minutes.
  • Heat the oven to 350 degrees F.
  • Roll out the dough between two sheets of plastic wrap, then cut out the cookies.
  • Bake the cookies on a cookie sheet lined with parchment paper until they are lightly browned (12 – 15 minutes).
  • Let the cookies cool.
  • Sift powdered sugar onto the top cookies.

 

For the ganache:

  • Add cream, butter and salt to a saucepan and bring to a boil.
  • Turn off the heat and stir in the Grand Marnier and the zest.
  • Pour the hot mix over the chocolate and let sit for a minute.
  • Stir until everything is well combined and no chocolate clumps remain. 
  • Spoon the ganache on the whole cookies and top with a cut-out center cookie.
