Recipe Notes: What could go wrong with a tenderloin steak? Really nothing, I think. It always tastes fantastic. I like to top it with a dollop of herb garlic butter and serve it with roasted potatoes and a simple green salad. 

 

Steak with Herb Garlic Butter

Ingredients:

For the herb garlic butter:

  • 6 tablespoons unsalted butter, softened
  • 1/2 teaspoon finely chopped fresh rosemary
  • 1/2 teaspoon finely chopped fresh thyme
  • 1 garlic clove, minced or pressed
  • 1/8 teaspoon salt

For the steak:

  • one large tenderloin steak
  • about 1 tablespoon canola oil

 

Directions:

For the herb garlic butter:

  • Mash all ingredients together with a fork until evenly mixed.

For the steak:

  • Set an empty cast iron pan into the oven, then heat the oven to 400 degrees F.
  • Pat the raw steak dry with paper towels.
  • Rub or brush the oil onto the steak. Be sure to cover it well on all sides. 
  • Sprinkle the steak with salt and pepper. 
  • Once the oven is at 400 degrees F., take the hot cast iron pan out and set it on the stovetop.
  • Turn the heat to high and heat the pan on the stove for a minute.
  • Set the steak into the pan, keep the heat on high and sear the steak for one minute. 
  • Flip the steak over and sear the opposite side for a minute. 
  • Transfer the pan with the steak into the oven and cook the steak to desired doneness. (For a rare steak, start checking the internal temperature with a meat thermometer after about 8 minutes. The steak is done when it has reached an internal temperature of 135 – 140 degrees F.)
